Dilli Tokri Chaat..also known as katori chaat is one
of the popular chaat delicacies from North India.
This authentic streetfood is made of special maida tokri/ katori shaped basket stuffed with spicy potato mixture and chutneys, yogurt, garnish with sev.
Here I prepared this chaat stuffing tokri with potato samosa( Delhi samosa), cripsy onion pakoras,and chutneys, curd, garnishing with sev and pomegranate pearls.
Ingredients and spices that need to be Prepare to make Dilli Tokri Chaat:
- for Tokri/ katori
- 1 cup (100 gms) maida
- to taste Salt
- 1 tbsp Ghee
- for stuffing:
- for making samosas :
- for inner stuffing;
- 2 medium boiled potatoes
- 2 tbsp boiled fresh green peas and
- 1 chopped onion
- 1 tbsp oil
- 1 tsp cummin seeds
- 1 tbsp green chillies-ginger paste
- 1/4 cup chopped fresh coriander leaves
- 1/4 tsp cloves- cinnamon powder
- 1 tsp coarsely grinded coriander seeds
- 1 tsp raw fennel seeds (variyali)
- 1 tsp dry mango powder (aamchur powder)
- to taste Salt
- as needed Oil for frying
- for samosa outer covering:
- 3/4 cup maida
- 2 tbsp oil/ ghee
- 1/4 tsp ajwain seeds
- 1 tsp lemon juice
- to taste Salt
- for For crispy onion pakoras:
- 2 big onions sliced
- 1 cup besan
- 1/4 tsp turmeric powder
- 2 tbsp red chilli powder
- 1/2 tsp ajwain seeds
- 2 tbsp finely chopped fresh coriander leaves
- to taste Salt
- for For Tokri/ katori chaat
- 8 tokri/katoris basket
- 2 finely chopped tomatoes
- 2 finely chopped onions
- 8 sev puri
- 50 gms besan sev
- as required Sweet chutney
- as required Pudhina chutney
- 1 cup yoghurt/ fresh dahi (whisked)
- as required Finely chopped fresh coriander leaves for garnish
- as required Chaat masala
- as required Pomegranate seeds
Instructions to make to make Dilli Tokri Chaat
- In mixing bowl add maida, oil/ ghee,salt mix and bind into tight dough. Cover & keep aside for 1/2 hour. Make 8 equal balls. Roll each into semi thick puris. Place & stick this rolled puri on back side of katori (as shown). Put in hot oil, deep fry on medium flame,as the steel katori and Tokri.. separate, remove steel katori from hot oil,lower the flame and fry tokri till golden brown and crispy. Similarly prepared all tokris in this way.



- For samosa stuffing..mash boiled potatoes when they are still warm. In kadhai add heat oil,do tempering of cummin seeds,as they splutter add & saute green chillies ginger paste & chopped coriander leaves,till dry mixture formed. Now add mashed potatoes mixture, boiled peas and add all spices.Mix well and cool the mixture before stuffing.


- Prepare soft dough for samosa outer covering from mentioned ingredients for it. Divide prepared dough into 4 balls, flatten each of them into round puris cut in half,fold each half to make cone, stuffed each cone with prepared potato mixture..seal the edges and deep fry prepared samosas in hot oil on slow flame till golden colour and crispy.



- Prepare crispy onion pakoras..in mixing bowl add sliced onion, sprinkle & mix salt. Keep aside for 10 mins. Now add besan and spices mix and deep fry Cripsy Onion Pakoras in hot oil on medium flame.



- To prepare Tokri Chaat.. Keep all the required ingredients ready.

- In mixing bowl (for individual serving),add 1 samosa,break into pieces. Add 4 small size crispy onion pakoras, 1 crushed sev puri, chopped tomato, onion,chaat masala. Mix well. Fill this prepared mixture in one prepared tokri, pour sweet chutney, phudina-kothmari chutney, whisked yogurt, sprinkle besan sev, finely chopped coriander leaves,chaat masala and serve it garnishing with pomegranate seeds.



- Similarly prepared all Dilli Tokri Chaat..at the time of serving.
